Mediterranean almond and orange cake recipe


1 cup almond flour 1 cup all-purpose flour 1 cup sugar 3 large eggs 1/2 cup olive oil Zest of 2 oranges


Juice of 1 orange 1 teaspoon baking powder 1/4 teaspoon salt Powdered sugar, for dusting (optional)


Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Step 2

In a large bowl, whisk together almond flour, all-purpose flour, sugar, baking powder, and salt.

In another bowl, beat the eggs until light and fluffy. Gradually add olive oil to the beaten eggs, whisking continuously.

Step 4

Stir in the orange zest and juice. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.

Step 5

Pour the batter into the prepared cake pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
